Taushe Idli (Cucumber Idli)

Taushe Idli is generally made for breakfast. In konkani, Taushe means cucumber. Generally cucumber is used in salads. So, many of them will be surprised to know that cucumber can also be used to make idlis and dosas. This idli is sweet which tastes very good along with ghee! People with diabetes may be worrying that they cannot eat these sweet idlis. Don't worry...Just omit jaggery. Even the unsweetened idlis tastes good along with coconut oil.I remember my amma adding turmeric leaves to these idlis. They taste awesome.The turmeric leaves add a very different taste to these idlis.Here I didn't use turmeric leaves.

Ingredients:
  • Raw rice/ Rice rava- 1 cup
  • Grated Cucumber- 1 cup
  • Grated coconut, fresh/frozen - 1/4 cup
  • Jaggery- To taste (optional, add according to how sweet you want )
  • Salt- 1/4 tsp
  • Turmeric leaves- 1 (optional)
 Procedure:

Soak rice for one hour. Then grind it with no water (you can add the water got while grating cucumber). The rice grains should be coarse otherwise idlis will turn hard.If you are using rice rava then soak it and drain the water completely. Now add grated coconut, grated cucumber, jaggery (if using) and salt to rice rava.Mix well. Tear the turmeric leaves and add to the rice mixture (I didn't use).( if you don't like jaggery/ you are not supposed to eat it then just skip jaggery). I added nearly 1/2 cup of jaggery.


Grease the idli moulds with oil. Pour the rice-cucumber mixture half way through in each mould.


Steam it for 15 minutes.


Taushe idlis are ready!! Serve hot with ghee (for sweet idlis) or coconut oil (for unsweetened idlis). Above measurement serves 2-3 people.

  1. Thanks for the recipe. Is the idli batter need to be kept for overnight and then need to steam it next day morning like how we do idli's generally.

  2. No Swaroopa. There is no fermentation required for this idli.
